The ONLY low cal recipe book you'll need here's why...

First let me say I've tried a TON of low calorie cookbooks and usually, out of a 300 page book I find two recipes I enjoy; either the recipes are for food like pea lentil soup (what the heck is that?) or for things you do know but the ingredients are unreasonable and difficult to find: this book suffers from neither of those issues. So the first great thing is the recipes. They are wonderful, easy to make, ingredients that you can find in your local grocery. I've tried and loved: egg and potato casserole, chicken salad with apple slices, baked mexican mac and cheese, sweet potato fries, spiced pumpkin apple oatmeal, beef and bean enchilada casserole, baked bean and corn chimichangas and those are just some of my new favorites.

There is also a color coded tab system in place that allows you to quickly identify recipes as: low sodium, quick, high in fiber which is something I appreciated as I try to stay low sodium if possible. And another thing I loved was lots of PICTURES. I am no chef and when trying something new I appreciate a visual goal. Chefs are probably laughing at that comment and I don't blame you! It's funny! But for someone who doesn't have a ton of cooking experience, it really does help.

Low-Cal But Not Bland

Just in time for New Year's resolutions to get healthier comes this cookbook by Better Homes and Gardens with more than 400 recipes, most in the 200-300 calorie per serving range and include everything from breakfast entrees to main meals (both vegetarian and meat) and side dishes, plus desserts. Also included are sandwiches and pizzas, soups and salads, and casseroles and slow cooker dishes.
As cookbooks go, this one is well organized and includes lots of color photographs which is always a plus for me. Besides the main divisions in the book by food type (breakfast, sandwiches, meat dishes, etc.), there are also mini-tabs that allow the reader to find recipes that are low sodium, high in fiber, and quick to make in 30 minutes or less. There is a helpful section at the beginning that gives suggestions for healthy substitutes for ingredients such as Greek yogurt instead of sour cream, whole wheat panko crumbs instead of french fried onions for toppings, and spaghetti squash instead of regular spaghetti pasta.
The main-dish salad section is one of my favorites. I made the Almond Chicken Salad with tasty results and will definitely make it again. I also look forward to trying the Sweet-and-Sour Chicken Bowl. Other recipes in the book that I have tagged to try include Golden Grilled Chicken Thighs with Apricots, Vegetarian Lentil Chili, Beefy Tortilla Casserole, and Turkey Pizza Burgers.
There is also a Triple Chocolate Cookie recipe that looks good at 90 calories per cookie, provided I can stop at just one. That's the challenge, though. For those counting calories and other nutritional info like fat grams, carbs, etc., the servings are pretty small. For example, some of the casseroles are made in an 8x8 square dish and serve six, a smaller serving than usual for some. On the other hand, most people using this cookbook are likely trying to cut back on what they eat to lose weight and therefore expect smaller servings.
Overall, I really like this cookbook and plan to incorporate recipes from it into my family's weekly menu. The ingredients focus on fresh vegetables and whole grains that are easily found in local grocery stores, and use herbs and spices instead of so much salt to add flavor.

Low cal, healthy and tasty!

The Ultimate Low-Calorie Book starts out with info on healthy eating basics, such as charts for portion sizes and smart substitutions like using hummus instead of mayo on your sandwich, plus it has a guide to selecting and storing produce and more. It was interesting and helped me learn more about nutrition and how to eat well. I'm a big label reader, so I also liked the tabs for recipes that are 30 minutes or less, have five grams of fiber or more, and which were low sodium.
The Slow Cooker area had lots of do-it-ahead meals like In Your Sleep Chili, which has only five ingredients in it and then you can add your fave toppings and the Miraculous Makeover section had yummy ideas like the Coconut Shrimp with Mango Rice Pilaf, my kind of dinner! Of course, I couldn't wait to see what sweets they had lightened up in the No Guilt Desserts section! Triple Chocolate Gelato with milk instead of cream and a Chocolate Cream Cheese pie using sugar free pudding and low fat cream cheese sounded delicious!
With fifteen chapters and over 400 recipes in The Ultimate Low-Calorie Book, it really is a full service cookbook and has suggestions about what to eat all day from breakfast, to sandwiches, snacks, main dishes and desserts. With seasonal treats like the Light and Luscious Pumpkin Pie, there's even something for the holidays!
